This cheesy garlic pull apart bread made with fresh milled flour is soft, fluffy, buttery, and packed with melty cheese and fresh garlic flavor in every bite. Perfect for pasta night, holidays, or cozy homemade dinners.
Mill 450 grams of fresh milled hard white wheat flour.
Combine flour, water, milk, egg, butter, honey, and salt in a mixer bowl. Do not add yeast yet.
Mix until shaggy and allow dough to rest covered for 30 minutes to 1 hour. This allows the dough to autolyse. (Do not skip this step.)
Add yeast to the dough and knead until smooth and elastic. If using a Kitchen Aid it usually takes about 20–25 minutes. For a Bosch about 15–20 minutes.
Place dough in greased bowl and allow to rise until doubled.
Mix the filling ingredients together and set to the side.
Roll dough into rectangle and spread with the garlic butter filling.
Sprinkle the grated parmesan and mozzarella cheese evenly over dough.
Cut the dough into squares or strips and stack into greased pan.
Allow bread to rise about 30 to 45 minutes or until puffy.
Bake at 350°F for 35–40 minutes or until internal temperature reaches 190°F.
Brush with garlic butter topping while warm.

Tips For The Best Fresh Milled Cheesy Garlic Bread
Use fresh garlic - Fresh garlic gives the best flavor and creates rich homemade garlic bread taste.
Don’t add too much flour- Fresh milled flour continues absorbing moisture during kneading and rising. Slightly sticky dough creates softer bread.
Shred your own cheese - Freshly shredded mozzarella melts better and creates the ultimate cheesy pull apart texture.
Use a thermometer - Bread is fully baked when the center reaches 190°F. This prevents doughy centers while keeping the bread soft.
